falafel wisdom



i need your advice about falafel. the last batch i made, i tried to fry instead of my usual method, broiling. anyway, the balls fell apart when i placed them in the oil. potential ball jokes aside, what did i do wrong? i'd like to get it right.

Darby-- The recipe that I use calls for me to pan fry them-- in just a bit of oil. Honestly, I'm scared to deep-fry, so I'm not much help there. I wonder if you could pan-fry yours??

i pan fry mine too, make them flat instead of perfectly round. i also have found that its good to let the mix set about 10 min before rolling into balls. good luck!

if all else fails amsterdam has great falafel! they now have a new mint-herb yogurt sauce that is sooo yum.
