New Fall Soup

This really hit the spot last night. It was so easy and so yummy.

Butternut Squash Soup

Saute the following in 1 T. butter for 5 minutes:
1 roughly chopped onion
1 chopped carrot (don't bother peeling)

Add:
3 c. chicken broth (or veggie broth)
1 apple, peel and chunked
1 butternut squash, peeled and chunked.

Simmer/boil for 10-15 minutes with lid on.

Add: 2 heaping t. of Chaat Masala (i bought this at the INdian grocery on our Spice Crawl)

Puree with an immersion blender. Enjoy!!

PERFECT TIMING!!! was just wondering what i should do with this lovely looking butternut squash that's sitting on my counter!

and since i have some of the peasant bread dough in the fridge...well, what a perfect combo!

making it right now. used garam masala, so it's a little different, but still smelling a-ma-zing.

oh. my. i just made this with canned pumpkin (added it after the apples & carrots were done & heated thru) and garam masala - so amazing!
