I picked up some amazing beet hummus at a natural food store in Ames, Iowa a few months ago. I tried my best to recreate it from the ingredient label. Here's my best try. I think it is pretty good: (Darby, I adjusted it a bit since you had it)
Beet Hummus
1 can whole beets, drained (would taste better with fresh, I'm sure!)
1 can drained garbanzo beans
2-3 T canola oil
1 1/2 T. red wine vinegar
3 cloves garlic
3/4 t. kosher salt
1/4 t. pepper
Blend up in a food processor until smooth.

Microwave Popcorn
I stole this idea from the Motherload blog. I use this "recipe" every Sunday night for our Dyer Family Movie Night. It is SO much cheaper than buying microwave popcorn. But, if you love that butter taste, you're out of luck. No replicating that in a home kitchen. Pretty sure you need a factory for that. ;)
1/3 c. popcorn
-- put it in a brown paper lunch bag
-- add:
1 good drizzle of olive oil
1 hearty sprinkling of table salt
-- fold the bag over twice, place on plate and microwave as you would a store-bought popcorn bag.

Zucchini bread (makes 2 loaves)
A great thing to make now since zucchini is in season. This recipe is adapted from my friend Molly Brandt's recipe. She also tipped me off to the great idea of shredding and freezing 2 cup portions of zucchini so you can make this bread easily all year long.
1 c. brown sugar
1 c. white sugar
2/3 c. vegetable or canola oil
1/3 c. applesauce
3 eggs
2 c. grated zucchini, not peeled
2 c. white flour
1 c. wheat flour
2 t. cinnamon
1 t. baking soda
1 t. baking powder
1/2 t. salt
1 c. chopped walnuts (optiona)
2 t. vanilla
Grease and line loaf pans with parchment or wax paper. Cream together the brown sugar, white sugar, oil, applesauce and eggs. Add zucchini. Mix together the flours, cinnamon, soda, powder and salt. Add to zucchini mixture. Fold in nuts and vanilla. Bake in 2 loaf pans for 50-60 minutes at 325 degrees.

How I make my guacamole.
Ada hearts this.
1 ripe avocado
1ish T. lemon juice (I like this better than lime)
2ish T. minced white onion
pinch dried oregano (kinda weird, but makes it yummy!)
1 small garlic clove, minced
salt to taste
Mash this all up with a potato masher and serve.

This is an awesome hummus recipe.
It seriously is kick-butt. Plus so, so much cheaper than buying prepared hummus. And, you can easily freeze it.
2 1/2 c. cooked chick-peas, plus 1/2 c. bean liquid
3 (smallish) cloves garlic, cut up a bit
1/4 c. ROASTED tahini(seriously, get the roasted stuff)
2 T. olive oil
juice of one lemon (or less)
1 t. salt
Drain beans (saving a bit of bean liquid). Place all ingredients in a food processor. Process until it has a very smooth consistencey (several minutes for me). Can add more bean liquid. Chill. Eat.
