What we like to do with leftover rice.

Vanilla Rice Pudding

1 c. leftover long-grain rice
about 2 1/2 c. milk
1/4 c. white sugar
1 cinnamon stick
-- heavily simmer in sauce pan for about 20 minutes (adjust milk quantity if needed)--
1/4 c. brown sugar
1 egg
--mix together in a seperate bowl. Add a few tablespoons hot rice to this mixture white stirring. Add a few more tablespoons and stir. Then, add brown sugar and egg mixture to the saucepan of rice and mix together.
-- stir until very creamy, about 10 minutes
-- add 1 t. vanilla and serve

this is GREAT as i was just looking through my cupboards and wondering how many ways i could serve up all the rice i seem to have collected! good for days like today...cold & snowy.

whenever i want get a hankering to make rice pudding with some leftovers, i never know what recipe to use. this helps! thanks cheryl!!

If I'm short on time, I just add another 1/4 c. sugar to and skip the egg part-- it is still good. :) -- Cheryl

i just made this again and added 6 oz of raisins soaked in warm rum. whoa, nelly. try it. i bet you could even add a splash of cognac instead, too. mmm.
